The Red Knight was the disguise of Robert Zabrinski.
Physical appearance[]

Box helmet.
It was a traditional English large red suit of armor. Zabrinski's wore a helmet big enough to fit his hair.[1] However, in the home console version, when the knight loses his helmet it covers its face with a box.
Personality[]
The Red Knight is very cunning often only attacking people when they least expect it.[2] When speaking he's shown to be very arrogant and confident often telling his foes about how he will smite them.

Scooby-Doo! Mystery Mayhem (GC/PS2/Xbox)[]

Zabrinski unmasked.
After Shaggy and Scooby-Doo capture the poltergeists in the electrical room, Scooby gets snatched by the Red Knight as Shaggy followed him to the "Roman" set where he was locked inside a cage, along with Daphne who was locked into a separate cage by the Red Knight. After Shaggy frees Scooby from his cage, they encounter the Red Knight and start running around the set. As the Red Knight chases after Shaggy and Scooby, but he realizes he's on the bucket of the catapult, as Shaggy and Scooby launch him to the column pillar set causing it to crumble. The Red Knight quickly escapes through the back door but loses his helmet in the rubble.
The gang makes a plan to trap the Red Knight in the "Space" set using Shaggy and Scooby as bait. However Fred has some difficulties lowering the castle drawbridge, which leads to the “Space” set, so Shaggy and Scooby had to keep the Red Knight busy until the drawbridge was lowered. The Red Knight is lured by Shaggy and Scooby to run onto a hidden net Earl blinds him with lights and Velma and Daphne pull up the net trapping the Red Knight. Everyone groups up and Fred unmasks the Red Knight to be Robert Zabrinski. He wanted to buy a film studio from the Milton brothers for Greenwood Development, so he dressed as the Red Knight and monster’s from the Tome of Doom to scare people away.[3]
Scooby-Doo! Mystery Mayhem (GBA)[]
When Shaggy asks Scooby-Doo to crawl forward without him to find some food, the Red Knight attacks and captures Shaggy while he’s alone. The Red Knight begins to wander around. Scooby finds out Daphne and Shaggy were locked within a cage. As a part of Daphne’s plan, Scooby pulls a lever which causes a boulder to roll into the Red Knight leaving behind a receipt for expensive cologne. The Red Knight begins wandering around the “Castle” set. The Red Knight chases Fred, Shaggy, and Scooby in a cart towards the main stage. The Red Knight chases after Scooby and Shaggy however they turn on the stage lights blinding the Red Knight allowing the gang to capture it. Everyone groups up and Fred unmasks the Red Knight to be Robert Zabrinski. He wanted to buy a film studio from the Milton brothers for Greenwood Development, so he dressed as the Red Knight and monsters from the Tome of Doom to scare people away.[4]
