When he believed that Edward DuFlay, the first celebrity chef from Newport Cove was a traitor in the American Revolutionary War, he tried either getting the Newport Inn shut down as the Red Ghost or bought by his other disguise of Bradley Bass.

Henry appeared as a nice and friendly old man. However, he was determined to keep some supposedly incriminating evidence on Edward Duflay as a tori a secret to protect his research. In the end, when he realized Duflay's innocence, he felt humiliated that his plot to shut down the inn was for nothing.
