The Ghost cattle were a hologram created by the employees working at Sladeville.

Fred and Daphne encountered the stampede of cattle, confusing the stomping hooves as a truck at first, while searching around the supposedly abandoned town of Sladeville, known to be taken over by outlaw Eli Slade. They ran for their lives as the raging herde gained up on the them and spread across the road preventing them from ducking out of the way. Daphne spots a nearby balcony at a hotel and uses her gymnastics to get up there, but was unable to help Fred do to not being able to jump high enough and get pulled up. As soon as he made contact with the rampaging cattle, they all fazed right through him, very much like the ghosts they encountered back at a nearby saloon with the rest of the gang. The herde soon ran out of town.
Later, after discovering everything was tourist attraction by employees, one of them named Hank reveals the cattle were just holograms from a movie projector, and the thundering hooves were from a speaker in a black box she found on the hotel balcony.
