She's egotistical, and cares about her bakery being the best, she also is shown to get startled easily when Fred and Daphne called out to her while they were setting the trap to catch her.

She wanted her bakery to get more customers, so she disguised herself as the Balmy Baker to ruin Mary Clair's business so she could get more customers for her bakery.
Mystery Inc. soon came to the doughnut shop and used their subtraction skills to solve the mystery and foil Carolina Cupcake's plan.
