The black knight is a green humanoid ghost dressed in a black helmet with a red feather, gauntlets and boots, while the front of his body is protected by some sort of shield based body armor.

Scooby-Doo! Mystery Adventures[]
The Black Knight is actually the ghost of Sir Mortimer. Joust for Fun was made out of his old castle, it was dismantled in Scotland and rebuilt in its current location. However, even since they opened, the Black Knight had haunted them and sent his dragon to scare the customers away. Owner Jane McHaggis believed that Sir Mortimer is getting revenge on them for moving the castle. Shortly before Mystery Inc.'s arrival, the Black Knight kidnapped her niece, Bernice.

Ewan wanted to get rich by forcing his wife to sell the Joust for Fun attraction to the Pizza Palace, dressing as the knight into scaring away guests and kidnapping their niece. He used a pair of bellows to make the supposed dragon move and spit fire.
Wizard Amziani[]
Amziani used the knight disguises and conjured up a dragon (aka disguised a tricycle) to scare Jane McHaggis into selling the tourist attraction to the Pizza Palace, so he could get rich and live in piece and quiet making potions and spells.
